MARINATED VEGETABLES

Ingredients

  • 250g Green bell pepper
  • 250g Red bell pepper
  • 250g Yellow bell pepper
  • 250g Red onion
  • 250g Eggplant
  • 250g Zucchini
  • 100ml Olive oil
  • 40ml Balsamic vinegar
  • Salt
  • Pepper

Instructions

  • Peel, wash and deseed all vegetables
  • Cut all vegetables into pieces of similar size so that they will cook evenly
  • Place the vegetables in a bowl and drizzle with the olive oil
  • Season the vegetables and place on a baking tray
  • Place the tray in the oven at 180c
  • Cook till the edges begin to char and the vegetables soften
  • Remove from the heat
  • Dizzle with the balsamic vinegar and leave to cool at room temperature
