MARINATED VEGETABLES

Ingredients
- 250g Green bell pepper
- 250g Red bell pepper
- 250g Yellow bell pepper
- 250g Red onion
- 250g Eggplant
- 250g Zucchini
- 100ml Olive oil
- 40ml Balsamic vinegar
- Salt
- Pepper
Instructions
- Peel, wash and deseed all vegetables
- Cut all vegetables into pieces of similar size so that they will cook evenly
- Place the vegetables in a bowl and drizzle with the olive oil
- Season the vegetables and place on a baking tray
- Place the tray in the oven at 180c
- Cook till the edges begin to char and the vegetables soften
- Remove from the heat
- Dizzle with the balsamic vinegar and leave to cool at room temperature
