LOBSTER SPAGHETTI
Prep/Cooking Time: 15-30 Minutes
Printable VersionIngredients (for two)
- 1 whole lobster
- 80g Cherry tomatoes
- 5g Garlic
- 5g Chili
- 20ml Olive oil
- 10ml White wine
- 30ml Lobster stock
- 50ml Tomato sauce
- 4 Leaves basil
- 250g Spaghetti
- Salt
- Pepper
Instructions
- Bring a pot of heavily salted water to the boil and cook the lobster for 4-5 minutes
- Once cooked remove from the water and cool in ice
- Once cooled remove all the flesh from the shell and reserve in the fridge
- Take the shells and make a bisque sauce for use in the dish (see recipe)
Serving to order
- Heat a saucepan over a medium gas and add to it the olive oil
- Add the sliced garlic and cook till beginning to color
- Add the sliced chili quickly followed by the halved cherry tomatoes
- Saute for 2 minutes then add the white wine
- Reduce the wine then add the bisque and the tomato sauce
- Once the mix simmers place the spaghetti in the water to cook
- Reduce the sauce till a coating consistency is achieved then add the chopped lobster
- When the pasta is cooked drain and add to the sauce
- Add fresh basil to the pan and season to taste
- Serve in a bowl ensuring the lobster pieces are visible.
