LENTILS

Ingredients

  • 160g Bacon
  • 2 Yellow onion
  • 1 Carrot (large)
  • 2 Rosemary sprigs
  • 2 Thyme sprigs
  • 3 Roma tomatoes
  • 500g Puy lentils
  • 1400g Vegetable stock
  • Salt and pepper to taste

Instructions

  • Roughly dice the bacon and place in a thick bottom pan
  • Begin to fry over a medium gas
  • Add to the bacon the finely diced carrots and onion
  • Fry till the vegetables begin to color
  • Add to the pan the herbs and fresh diced tomatoes
  • Cook till the tomatoes begin to break apart
  • Add to the pan the lentils and the stock
  • Bring to the boil and leave to simmer till the lentils are cooked al dente
  • Remove from the heat and season to taste
