LENTILS

Ingredients
- 160g Bacon
- 2 Yellow onion
- 1 Carrot (large)
- 2 Rosemary sprigs
- 2 Thyme sprigs
- 3 Roma tomatoes
- 500g Puy lentils
- 1400g Vegetable stock
- Salt and pepper to taste
Instructions
- Roughly dice the bacon and place in a thick bottom pan
- Begin to fry over a medium gas
- Add to the bacon the finely diced carrots and onion
- Fry till the vegetables begin to color
- Add to the pan the herbs and fresh diced tomatoes
- Cook till the tomatoes begin to break apart
- Add to the pan the lentils and the stock
- Bring to the boil and leave to simmer till the lentils are cooked al dente
- Remove from the heat and season to taste
