LENTIL SOUP

Ingredients

  • 2 Large onions
  • 2 Large carrots
  • 50ml Olive oil
  • 400g Tomato paste
  • 1 tsp Coriander powder
  • 1 tsp Dry oregano
  • 1 tsp Chili flakes
  • 2 tsp Paprika
  • 1600g Lentils
  • 6ltr Vegetable stock

Instructions

  • Heat a large pan on the stove
  • Add to the pan the Olive oil and the finely chopped onions and carrot
  • Cook till the onions begin to take color
  • Add to the pan the herbs and spices
  • Cook for a couple minutes before adding the lentils
  • Stir in well and add the stock
  • Cook over a low gas until the lentils are tender
  • Remove from the heat and season to taste
