LENTIL SOUP
Prep/Cooking Time:
45-60 Minutes
Ingredients
- 2 Large onions
- 2 Large carrots
- 50ml Olive oil
- 400g Tomato paste
- 1 tsp Coriander powder
- 1 tsp Dry oregano
- 1 tsp Chili flakes
- 2 tsp Paprika
- 1600g Lentils
- 6ltr Vegetable stock
Instructions
- Heat a large pan on the stove
- Add to the pan the Olive oil and the finely chopped onions and carrot
- Cook till the onions begin to take color
- Add to the pan the herbs and spices
- Cook for a couple minutes before adding the lentils
- Stir in well and add the stock
- Cook over a low gas until the lentils are tender
- Remove from the heat and season to taste
