LEMON TARTS

Prep/Cooking Time: 30-45 Minutes

Ingredients

  • 500ml Heavy cream
  • 100g Sugar
  • 3 Lemons juiced
  • 30 Fresh raspberries
  • 30 Pre made tart shells

Instructions

  • Pour the cream into a thick bottom pan
  • Add to the pan the sugar
  • Also add to the pan the lemon juice, careful to remove att seeds
  • Place over a low gas
  • Once boiled simmer for 5 minutes
  • Remove from the heat and leave to cool
  • Once nearly cold pour the mix into the tart shells
  • Place the tarts in the fridge and leave to set completely

To serve

  • Remove the tarts from the fridge and place on a serving dish
  • Top with a single raspberry
