LEEK & BLUE CHEESE BAKE

Ingredients

  • 400g Leeks
  • 100g Onion
  • 2 Pieces Garlic
  • 1 Sprig Thyme
  • 1 Stick Rosemary
  • 50g Butter
  • 100g Flour
  • 400ml Milk
  • 100g Blue cheese
  • 50g Parmesan
  • Salt
  • Pepper

Instructions

  • Peel the onions, garlic and clean the leeks
  • Roughly chop to pieces of equal size
  • Place the butter in the pan and add to it the vegetables and herbs
  • Cook over a medium heat until softened
  • Add to the pan the flour and stir well
  • Add the milk to the pan and stir till it begins to simmer
  • The sauce will thicken
  • Cook for 5-8 minutes
  • Add to the pan the parmesan and the blue cheese
  • Season the sauce to taste

To serve cook penne pasta and mix with the warmed sauce

Place the mixed pasta in a iron dish and sprinkle with parmesan

Place in the oven at 180c

Cook till beginning to brown

Serve on an under plate
