LEEK & BLUE CHEESE BAKE

Ingredients
- 400g Leeks
- 100g Onion
- 2 Pieces Garlic
- 1 Sprig Thyme
- 1 Stick Rosemary
- 50g Butter
- 100g Flour
- 400ml Milk
- 100g Blue cheese
- 50g Parmesan
- Salt
- Pepper
Instructions
- Peel the onions, garlic and clean the leeks
- Roughly chop to pieces of equal size
- Place the butter in the pan and add to it the vegetables and herbs
- Cook over a medium heat until softened
- Add to the pan the flour and stir well
- Add the milk to the pan and stir till it begins to simmer
- The sauce will thicken
- Cook for 5-8 minutes
- Add to the pan the parmesan and the blue cheese
- Season the sauce to taste
To serve cook penne pasta and mix with the warmed sauce
Place the mixed pasta in a iron dish and sprinkle with parmesan
Place in the oven at 180c
Cook till beginning to brown
Serve on an under plate
