LAMB CHUMP

Prep/Cooking Time: 15-30 Minutes

Ingredients

  • 180g Lamb chump
  • 3g Rosemary
  • 1g Thyme
  • 3g Garlic
  • 60g Yellow bell peppers
  • 60g Marinated artichokes
  • 30g Green beans
  • Olive oil

Instructions

  • Roughly chop the herbs and garlic and mix with the olive oil
  • Add the lamb pieces to the herbs and garlic to marinate for at least 6 hours
  • Remove the core and seeds from the pepper and cut into 8ths
  • Drain the artichokes and keep on the side till needed
  • To cook pre-heat a pan with a little oil
  • Season the lamb with salt and pepper and place in the hot pan
  • Cook on all sides till golden in color
  • Cook in the oven till MR then leave to rest
  • In another hot pan add the olive oil and the bell pepper pieces
  • Once the pepper is beginning to blister add to the pan the artichokes & green beans and cook till hot
  • Season with salt and pepper
  • Spoon onto the center of the plate 
  • Check that the lamb is hot and slice into 3 pieces
  • Place the lamb on top of the peppers and spoon over the cooking juice
