LAMB CHUMP
Prep/Cooking Time:
15-30 Minutes
Ingredients
- 180g Lamb chump
- 3g Rosemary
- 1g Thyme
- 3g Garlic
- 60g Yellow bell peppers
- 60g Marinated artichokes
- 30g Green beans
- Olive oil
Instructions
- Roughly chop the herbs and garlic and mix with the olive oil
- Add the lamb pieces to the herbs and garlic to marinate for at least 6 hours
- Remove the core and seeds from the pepper and cut into 8ths
- Drain the artichokes and keep on the side till needed
- To cook pre-heat a pan with a little oil
- Season the lamb with salt and pepper and place in the hot pan
- Cook on all sides till golden in color
- Cook in the oven till MR then leave to rest
- In another hot pan add the olive oil and the bell pepper pieces
- Once the pepper is beginning to blister add to the pan the artichokes & green beans and cook till hot
- Season with salt and pepper
- Spoon onto the center of the plate
- Check that the lamb is hot and slice into 3 pieces
- Place the lamb on top of the peppers and spoon over the cooking juice
