JAX CARAMELIZED ONIONS

Ingredients

  • 3 lbs yellow onions
  • 40ml olive oil
  • 200g sugar
  • 400g white vinegar
  • 500g red wine
  • 20g salt

Instructions

  • Peel and finely slice the onions
  • Place the oil in a thick bottomed pan over a high heat
  • Add the sliced onions to the pan and fry till starting to color
  • Add to the pan the sugar and begin to caramelize
  • Add to the pan the vinegar and red wine
  • Bring to the boil and then turn down to a simmer
  • Simmer over a low heat till all the liquid has evaporated
  • Remove from the heat and add to the pan the salt, stir well
  • Leave to cool then reserve till needed
