HOME FRY MASH

Prep/Cooking Time: 30-45 Minutes

  Ingredients

  • Potatoes
  • Olive oil
  • Heavy cream
  • Butter
  • Aged cheddar
  • Rosemary
  • Garlic
  • Salt
  • Black pepper

Instructions

  • Peel and wash the potatoes
  • Cut the potatoes into a 2" dice and place in a mixing bowl
  • Add to the potatoes the garlic cloves (peeled) and the rosemary leaves (so remove the woody stem)
  • Toss this with the olive oil, salt and pepper
  • Place the potatoes on a baking sheet
  • Now cook the potatoes in a pre heated oven at 380f for 40 minutes, or until cooked through
  • Once cooked remove from the heat and place in a bowl
  • Cover the bowl with plastic wrap and leave to stand for 10 minutes
  • Whilst the potatoes are standing put the butter and cream into a pan and bring to the boil
  • As the cream reaches the boil begin to break the potatoes with the back of a plastic spoon
  • Add the cream to the potatoes and mix well
  • Add the shredded cheese and stir through
  • Season to taste and serve
