HOME FRY MASH

30-45 Minutes
Ingredients
- Potatoes
- Olive oil
- Heavy cream
- Butter
- Aged cheddar
- Rosemary
- Garlic
- Salt
- Black pepper
Instructions
- Peel and wash the potatoes
- Cut the potatoes into a 2" dice and place in a mixing bowl
- Add to the potatoes the garlic cloves (peeled) and the rosemary leaves (so remove the woody stem)
- Toss this with the olive oil, salt and pepper
- Place the potatoes on a baking sheet
- Now cook the potatoes in a pre heated oven at 380f for 40 minutes, or until cooked through
- Once cooked remove from the heat and place in a bowl
- Cover the bowl with plastic wrap and leave to stand for 10 minutes
- Whilst the potatoes are standing put the butter and cream into a pan and bring to the boil
- As the cream reaches the boil begin to break the potatoes with the back of a plastic spoon
- Add the cream to the potatoes and mix well
- Add the shredded cheese and stir through
- Season to taste and serve
