HARISSA

Ingredients

  • 110g Red bell peppers
  • 70g Red onion
  • 80g Red chili
  • 8g Thai chilies
  • 14g Garlic
  • 3g Cumin
  • 3g Coriander powder
  • 2g Chili flakes
  • 50g White wine vinegar
  • 60g Tomato paste
  • 4g Paprika

Instructions

  • Wash the bell peppers and chilies
  • Remove any stalks and seeds
  • Smash the garlic and remove the peel
  • Roughly chop the peppers, chili and garlic
  • Place in a pan with a little oil
  • Cook at a high temperature till beginning to color and soften
  • Add the tomato paste & vinegar and cook for 5 minutes
  • In a second dry pan place all the spices and toast over a medium heat
  • Once toasted add directly to the pan with the pepper mix
  • Stir together then leave to stand for a couple hours
  • Once cooled blend
  • Place in a container for storage
