HARISSA
Prep/Cooking Time:

Ingredients
- 110g Red bell peppers
- 70g Red onion
- 80g Red chili
- 8g Thai chilies
- 14g Garlic
- 3g Cumin
- 3g Coriander powder
- 2g Chili flakes
- 50g White wine vinegar
- 60g Tomato paste
- 4g Paprika
Instructions
- Wash the bell peppers and chilies
- Remove any stalks and seeds
- Smash the garlic and remove the peel
- Roughly chop the peppers, chili and garlic
- Place in a pan with a little oil
- Cook at a high temperature till beginning to color and soften
- Add the tomato paste & vinegar and cook for 5 minutes
- In a second dry pan place all the spices and toast over a medium heat
- Once toasted add directly to the pan with the pepper mix
- Stir together then leave to stand for a couple hours
- Once cooled blend
- Place in a container for storage
