GRILLED VEGETABLES

Ingredients

  • 1 red bell pepper
  • 1 green bell pepper
  • 1 eggplant
  • 1 green zucchini
  • 1 yellow zucchini
  • 1 large red onion
  • 100g olive oil
  • salt
  • pepper
  • 1 sprig thyme
  • 1 sprig rosemary
  • 1 lemon

Instructions

  • Wash all the vegetables to make sure they are clean
  • Quarter and dessed the bell peppers and place on a tray
  • Remove the tops and tails of the eggplant and zucchini
  • Slice from top to bottom 1cm in thickness. Add to the tray
  • Peel the onion and cut crossways into 1cm thick rings. Add to the tray
  • Drissle the vegetables with the olive oil and season generously
  • Place the vegetables on the chargrill, cook on both sides till a little charred and cooked through
  • Remove from the heat and place in a bowl
  • Zest the lemon over the top of the vegetables
  • Pick the herbs and add to the bowl, turn through
  • Cover with clingfilm and leave to cool

  • Once cool reserve in the fridge till needed
