GRILLED VEGETABLES

Ingredients
- 1 red bell pepper
- 1 green bell pepper
- 1 eggplant
- 1 green zucchini
- 1 yellow zucchini
- 1 large red onion
- 100g olive oil
- salt
- pepper
- 1 sprig thyme
- 1 sprig rosemary
- 1 lemon
Instructions
- Wash all the vegetables to make sure they are clean
- Quarter and dessed the bell peppers and place on a tray
- Remove the tops and tails of the eggplant and zucchini
- Slice from top to bottom 1cm in thickness. Add to the tray
- Peel the onion and cut crossways into 1cm thick rings. Add to the tray
- Drissle the vegetables with the olive oil and season generously
- Place the vegetables on the chargrill, cook on both sides till a little charred and cooked through
- Remove from the heat and place in a bowl
- Zest the lemon over the top of the vegetables
- Pick the herbs and add to the bowl, turn through
- Cover with clingfilm and leave to cool
- Once cool reserve in the fridge till needed
