GREEK SALAD

Ingredients

  • 80g Cucumber
  • 120g Tomato
  • 20g Red onion
  • 60g Feta cheese
  • 25g Olives
  • 35g Rocket
  • 10ml Red wine vinegar
  • 10ml Olive oil

Instructions

  • Cut the cucumbers into 1/4s lengthways
  • Remove the seeds and cut the cucumber into bite size pieces
  • Reserve in the fridge till needed
  • Wash the tomatoes and remove the stems
  • Cut into chunky bite size pieces and reserve in the fridge
  • Peel the onion and slice as finely as possible
  • Remove the feta from the water and break into rough pieces
  • To serve place all the salad items into a bowl and add to it the olives
  • Drizzle with the vinegar and olive oil and add to the bowl the rocket
  • Toss well and season to taste
  • Spoon into a bowl and top with the crumbled feta cheese
