GREEK SALAD
Prep/Cooking Time:
15-30 Minutes
Ingredients
- 80g Cucumber
- 120g Tomato
- 20g Red onion
- 60g Feta cheese
- 25g Olives
- 35g Rocket
- 10ml Red wine vinegar
- 10ml Olive oil
Instructions
- Cut the cucumbers into 1/4s lengthways
- Remove the seeds and cut the cucumber into bite size pieces
- Reserve in the fridge till needed
- Wash the tomatoes and remove the stems
- Cut into chunky bite size pieces and reserve in the fridge
- Peel the onion and slice as finely as possible
- Remove the feta from the water and break into rough pieces
- To serve place all the salad items into a bowl and add to it the olives
- Drizzle with the vinegar and olive oil and add to the bowl the rocket
- Toss well and season to taste
- Spoon into a bowl and top with the crumbled feta cheese
