GNOCCHI NDUJA

Ingredients

  • 120g Gnocchi
  • 60g Nduja sausage
  • 100g Red onions
  • 20ml Olive oil
  • 50g Tomato sauce
  • 10g Parmesan
  • 3g Parsley
  • Salt
  • Pepper

Instructions

  • Peel the red onions and remove the core
  • Cut the onion into 8ths and spread over a baking tray
  • Drizzle with olive oil and seasoning
  • Place the onions in the oven and cook at 180c till the edges begin to caramelize
  • Once cooked remove from the oven and cool
  • To serve
  • Heat a thick bottom pan on the stove with a little olive oil
  • Add to the pan the Nduja sausage and cook till starting to color
  • Add the onions and saute for a minute 
  • Add to the pan the tomato sauce and bring to the simmer
  • Cook the Gnocchi in salted boiling water
  • Once the gnocchi is cooked remove from the water and drain
  • Add the gnocchi to the pan and mix well
  • Season to taste and serve
  • Top with grated parmesan
  • Sprinkle with chopped parsley
