GNOCCHI NDUJA

Ingredients
- 120g Gnocchi
- 60g Nduja sausage
- 100g Red onions
- 20ml Olive oil
- 50g Tomato sauce
- 10g Parmesan
- 3g Parsley
- Salt
- Pepper
Instructions
- Peel the red onions and remove the core
- Cut the onion into 8ths and spread over a baking tray
- Drizzle with olive oil and seasoning
- Place the onions in the oven and cook at 180c till the edges begin to caramelize
- Once cooked remove from the oven and cool
- To serve
- Heat a thick bottom pan on the stove with a little olive oil
- Add to the pan the Nduja sausage and cook till starting to color
- Add the onions and saute for a minute
- Add to the pan the tomato sauce and bring to the simmer
- Cook the Gnocchi in salted boiling water
- Once the gnocchi is cooked remove from the water and drain
- Add the gnocchi to the pan and mix well
- Season to taste and serve
- Top with grated parmesan
- Sprinkle with chopped parsley
