GAZPACHO

 Ingredients

  • 2 Red bell pepper
  • 2 Yellow bell pepper
  • 2 Green bell pepper
  • 1 Cucumber
  • 1 Red onion
  • 12 Roma tomatoes (plum)
  • 50ml Olive oil
  • Red wine vinegar
  • Salt
  • Black pepper

Instructions

Gazpacho is a raw soup so you will need to find the ripest vegetables to get the best flavor.

The soup is blended so where it says roughly chop it needs to be a size that will fit into the blender jug!

  • Wash and dry off all of the vegetables 
  • Peel the onion and chop roughly
  • Core and de-seed the bell peppers and roughly chop
  • Remove the stem from the cucumber and core the tomatoes
  • Roughly chop and add to the peppers
  • Now fill the blender jug 2/3s with the mixed chopped vegetables
  • Blend till the vegetables become soup like in consistency
  • Keep blending the vegetables till they are all done
  • Add to the soup the olive oil
  • Season with the red wine vinegar, salt and pepper

There is no amount for the vinegar so add little by little till you achieve the acidity that you require.
