FLATTENED PORK

Ingredients

  • 200g pork chop
  • 20g egg
  • 30g flour
  • 40g bread crumbs
  • 60g olive oil
  • 20g butter
  • 2g salt
  • 1g pepper
  • 10g grain mustard
  • 40g mayonnaise
  • 5g WW vinegar
  • 120g cucumber dill salad

Instructions

  • Remove any bone and sinu from the pork 
  • Cut butterfly and pound till thin
  • Season the flour with the salt and pepper and place in a bowl
  • Add the pork to the bowl and coat evenly with flour
  • Whisk the egg in a second bowl and place the breadcrumbs in a third bowl
  • Coat the floured pork with the egg and place into the crumb
  • Coat the pork evenly with the crumbs
  • Heat a pan over a medium gas
  • Place the breaded pork in the pan and cook till golden on the bottom side
  • Turn over the pork and add the butter
  • Cook until the pork is golden on both sides
  • Once cooked through remove the pork from the oil and dry on paper
  • Place the grain mustard, mayonnaise and WW vinegar in a bowl and whisk together
  • Spoon the mustard mayo into a ramakin and place on a plate
  • Add the cooked pork to the plate followed by the cucumber pickle
  • Serve
