FLATTENED PORK

Ingredients
- 200g pork chop
- 20g egg
- 30g flour
- 40g bread crumbs
- 60g olive oil
- 20g butter
- 2g salt
- 1g pepper
- 10g grain mustard
- 40g mayonnaise
- 5g WW vinegar
- 120g cucumber dill salad
Instructions
- Remove any bone and sinu from the pork
- Cut butterfly and pound till thin
- Season the flour with the salt and pepper and place in a bowl
- Add the pork to the bowl and coat evenly with flour
- Whisk the egg in a second bowl and place the breadcrumbs in a third bowl
- Coat the floured pork with the egg and place into the crumb
- Coat the pork evenly with the crumbs
- Heat a pan over a medium gas
- Place the breaded pork in the pan and cook till golden on the bottom side
- Turn over the pork and add the butter
- Cook until the pork is golden on both sides
- Once cooked through remove the pork from the oil and dry on paper
- Place the grain mustard, mayonnaise and WW vinegar in a bowl and whisk together
- Spoon the mustard mayo into a ramakin and place on a plate
- Add the cooked pork to the plate followed by the cucumber pickle
- Serve
