CREME BRULEE

Ingredients

  • 1ltr Heavy cream
  • 4 Whole eggs
  • 6 Egg yolks
  • 200g Sugar
  • 1 tsp Vanilla essence

Instructions

  • Place the cream in a thick bottom pan and bring to the boil
  • In a mixing bowl combine the eggs, yolks, sugar and cream
  • Once the cream boils pour half onto the eggs mix
  • Stir well and pour back into the pan
  • Cook over a low heat until the mixture coats the back of the spoon
  • Remove from the heat and add the vanilla
  • Strain through a sieve
  • Pour the hot mix into the ramekins
  • Place the ramekins in a water bath and place in the oven
  • Cook at 260f for 25 minutes or until set
  • Turn half way through so as to cook evenly
  • Once cooked leave to cool
  • Reserve in the fridge till needed
