CREME BRULEE

Ingredients
- 1ltr Heavy cream
- 4 Whole eggs
- 6 Egg yolks
- 200g Sugar
- 1 tsp Vanilla essence
Instructions
- Place the cream in a thick bottom pan and bring to the boil
- In a mixing bowl combine the eggs, yolks, sugar and cream
- Once the cream boils pour half onto the eggs mix
- Stir well and pour back into the pan
- Cook over a low heat until the mixture coats the back of the spoon
- Remove from the heat and add the vanilla
- Strain through a sieve
- Pour the hot mix into the ramekins
- Place the ramekins in a water bath and place in the oven
- Cook at 260f for 25 minutes or until set
- Turn half way through so as to cook evenly
- Once cooked leave to cool
- Reserve in the fridge till needed
