CONFIT TUNA SALAD

Ingredients

  • 120g confit tuna
  • 25g olives
  • 15g capers
  • 10g red onion
  • 10ml white vinegar
  • 10ml olive oil
  • 2g parsley
  • Salt
  • Pepper

Instructions

  • Remove the tuna from the oil and leave to drain
  • Place the olives and capers in a small mixing bowl
  • Peel and finely slice the onion
  • Add the onion to the capers and olives
  • Add the vinegar and olive oil and toss together
  • Break the tuna into chunks and add to the mixing bowl
  • Pick the parsley leaves and add to the bowl also
  • Gently mix together ensuring no to break up the tuna
  • Season to taste and serve
