CONFIT TUNA SALAD

Ingredients
- 120g confit tuna
- 25g olives
- 15g capers
- 10g red onion
- 10ml white vinegar
- 10ml olive oil
- 2g parsley
- Salt
- Pepper
Instructions
- Remove the tuna from the oil and leave to drain
- Place the olives and capers in a small mixing bowl
- Peel and finely slice the onion
- Add the onion to the capers and olives
- Add the vinegar and olive oil and toss together
- Break the tuna into chunks and add to the mixing bowl
- Pick the parsley leaves and add to the bowl also
- Gently mix together ensuring no to break up the tuna
- Season to taste and serve
