CONCH FRITTERS

Ingredients

  • 1 kilo conch
  • 1/2 cup tomato ketchup
  • 1/2 cup jerk seasoning 
  • Flour to thicken
  • Baking powder
  • Baking soda
  • salt
  • pepper
  • Dry complete seasoning

Instructions

  • Peel and trim the Conch
  • Cut the conch into small pieces
  • Place the conch in the robo coupe and blend briefly
  • Conch should be chunky NOT SMOOTH
  • Place the Conch in a bowl and add to it the ketchup and fresh jerk marinate
  • Mix well
  • Add to the bowl the flour, baking powder and baking soda
  • Mix well
  • Season to taste
  • Cook a tester piece to check flavour and consistency
