CONCH FRITTERS

Ingredients
- 1 kilo conch
- 1/2 cup tomato ketchup
- 1/2 cup jerk seasoning
- Flour to thicken
- Baking powder
- Baking soda
- salt
- pepper
- Dry complete seasoning
Instructions
- Peel and trim the Conch
- Cut the conch into small pieces
- Place the conch in the robo coupe and blend briefly
- Conch should be chunky NOT SMOOTH
- Place the Conch in a bowl and add to it the ketchup and fresh jerk marinate
- Mix well
- Add to the bowl the flour, baking powder and baking soda
- Mix well
- Season to taste
- Cook a tester piece to check flavour and consistency
