CHRISTMAS PUDDING

Ingredients

Part 1

  • 300g Mixed peel
  • 150g Dried cranberry
  • 300g Currants
  • 300g Sultanas
  • 250ml Brandy
  • 180g Fresh breadcrumbs
  • 2 Lemons zested
  • 2 Medium apples peeled and grated
  • 100g Honey

Part 2

  • 300g Dark brown muscovado sugar
  • 250g Butter
  • 6 Large eggs
  • 200g Plain flour
  • 12g Cinnamon
  • 2g All spice
  • 2g Ground cloves
  • 2 TSP Baking powder

Instructions

  • Place all the ingredients in part 1 together in a mixing bowl
  • Mix together well and leave to stand
  • Place the butter and sugar in a mixing bowl and beat with the paddle
  • Once smooth add the eggs one by one until all 6 are incorporated
  • Remove the bowl from the machine
  • Sieve the flour, spices and baking powder together and add to the mixing bowl
  • Fold the ingredients together till well combined
  • Add the dried fruit bowl to the batter mix and stir well
  • Spoon the mix into buttered molds and cover with foil
  • Steam for 4 hours till cooked through
  • After 4 hours remove from the heat and leave to cool naturally
  • Refrigerate till needed
  • Steam to reheat and serve
