CHORIZO POTATOES

Prep/Cooking Time: 30-45 Minutes

Ingredients

  • 1 Kilo New potatoes
  • 250g Chorizo
  • 100ml Olive oil
  • 1/4 Bunch Coriander
  • Salt
  • Pepper

Instructions

  • Place the new potatoes in a cooking pot with salt and water
  • Bring to the boil and simmer till cooked
  • Once cooked remove from the water and leave to cool naturally
  • Roughly chop the chorizo and place in a frying pan
  • Cook over a medium gas until the oil comes out and the chorizo begins to color
  • Add the cooked potatoes to the pan and warm through so the potatoes take on the oil
  • Season well and add in the coriander chopped
  • Serve Warm
