CHORIZO POTATOES

Ingredients
- 1 Kilo New potatoes
- 250g Chorizo
- 100ml Olive oil
- 1/4 Bunch Coriander
- Salt
- Pepper
Instructions
- Place the new potatoes in a cooking pot with salt and water
- Bring to the boil and simmer till cooked
- Once cooked remove from the water and leave to cool naturally
- Roughly chop the chorizo and place in a frying pan
- Cook over a medium gas until the oil comes out and the chorizo begins to color
- Add the cooked potatoes to the pan and warm through so the potatoes take on the oil
- Season well and add in the coriander chopped
- Serve Warm
