CHICKEN & CASHEW NUT SALAD
Prep/Cooking Time: 15-30 Minutes

- 80g Cooked chicken breast
- 60g Romaine lettuce
- 20g Rocket
- 1 Oranges
- 40g Cucumber
- 20g Cashew nuts (Raw)
- 5g Sesame seeds (Toasted)
- 40g Orange juice
- 20g Dijon mustard
- 10g Honey
- 20g White wine vinegar
- 1 Egg yolk
- Olive oil (enough to emulsify)
- Salt
- Pepper
- (makes enough for 10 portions)
Instructions
- For the dressing place the egg yolk, mustard, honey, orange juice & vinegar in a bowl
- Whisk together till is a smooth sauce consistency
- Add the oil whilst whisking all the time to emulsify the dressing
- Season to taste and reserve in the fridge till needed.
- Cut the romaine into bite size pieces
- Wash the romaine along with the rocket leaves
- Dry in a salad spinner then place in a mixing bowl
- Add to the bowl the segments from the orange and the peeled and de-seeded cucumber pieces
- Add the raw cashew nuts and toss together
- Add the dressing (or place on the side in a tub)
- Season if serving immediately
- Place into the to go container or spoon onto a plate
- Sprinkle with a generous amount of the toasted sesame seeds
- Top with the sliced cooked chicken breast
