CHIA COCONUT PUDDING

Ingredients

  • 200g Chia seeds
  • 800g Coconut milk
  • 120g Orange juice
  • 70g Sugar (or alternative sweetener)
  • 120g Pineapple

Instructions

  • Place all the ingredients in a bowl apart from the pineapple
  • Whisk them together well
  • Leave to sit in the fridge for 2 hours
  • Peel the pineapple and cut into a rough dice
  • After 2 hours stir the chia mix well and add the chopped pineapple
  • Re-cover with plastic and leave to sit in the fridge
  • Spoon into a dish to serve
