CHIA COCONUT PUDDING
Prep/Cooking Time:
Ingredients
- 200g Chia seeds
- 800g Coconut milk
- 120g Orange juice
- 70g Sugar (or alternative sweetener)
- 120g Pineapple
Instructions
- Place all the ingredients in a bowl apart from the pineapple
- Whisk them together well
- Leave to sit in the fridge for 2 hours
- Peel the pineapple and cut into a rough dice
- After 2 hours stir the chia mix well and add the chopped pineapple
- Re-cover with plastic and leave to sit in the fridge
- Spoon into a dish to serve
