CELERIAC REMOULADE

Ingredients

  • 400g Celeriac
  • 200g Mayonnaise
  • 35g Grain mustard
  • 20g White wine vinegar
  • 20g Olive oil
  • 5g salt
  • Pepper

Instructions

  • Peel the celeriac and wash away any grit
  • Pat dry the celeriac
  • Slice on the mandoline
  • Cut the celeriac into matchsticks
  • Place the celeriac in a bowl and reserve in the fridge
  • Place the mayonnaise in a bowl along with the mustard, vinegar and olive oil
  • Mix well
  • Add to the bowl the celeriac and the salt
  • Mix well
  • Season with pepper of necessary
  • Reserve in the fridge till needed
