CELERIAC REMOULADE

Ingredients
- 400g Celeriac
- 200g Mayonnaise
- 35g Grain mustard
- 20g White wine vinegar
- 20g Olive oil
- 5g salt
- Pepper
Instructions
- Peel the celeriac and wash away any grit
- Pat dry the celeriac
- Slice on the mandoline
- Cut the celeriac into matchsticks
- Place the celeriac in a bowl and reserve in the fridge
- Place the mayonnaise in a bowl along with the mustard, vinegar and olive oil
- Mix well
- Add to the bowl the celeriac and the salt
- Mix well
- Season with pepper of necessary
- Reserve in the fridge till needed
