BELL PEPPER AND ONION TORTILLA
Prep/Cooking Time: 30-45 Minutes

- 30g olive oil
- 800g potatoes
- 120g red bell peppers
- 120g red onion
- 6g salt
- 2g pepper
- 600g egg
Instructions
- Wash the potatoes and bell peppers and pat dry
- Finely slice the potatoes with their skin on
- Place a large pan on the heat and add to the pan the olive oil
- Add the potatoes and cook over a high heat
- Cook the potatoes till they are evenly starting to colour and are becoming tender
- Add to the pan the red onions and peppers finely sliced
- Cook till the onions and peppers are beginning to caramelize
- Crack the eggs into a bowl and beat together
- Add the eggs to the pan and stir so the eggs are evenly distributed
- Place the pan in the oven
- Cook till the eggs are completely set
- Remove from the heat and leave to cool
- Once cold reserve in the fridge till needed
- To serve cut into dice
