BELL PEPPER AND ONION TORTILLA

Ingredients

  • 30g olive oil
  • 800g potatoes
  • 120g red bell peppers
  • 120g red onion
  • 6g salt
  • 2g pepper
  • 600g egg

Instructions

  • Wash the potatoes and bell peppers and pat dry
  • Finely slice the potatoes with their skin on
  • Place a large pan on the heat and add to the pan the olive oil
  • Add the potatoes and cook over a high heat
  • Cook the potatoes till they are evenly starting to colour and are becoming tender
  • Add to the pan the red onions and peppers finely sliced
  • Cook till the onions and peppers are beginning to caramelize
  • Crack the eggs into a bowl and beat together
  • Add the eggs to the pan and stir so the eggs are evenly distributed
  • Place the pan in the oven 
  • Cook till the eggs are completely set
  • Remove from the heat and leave to cool
  • Once cold reserve in the fridge till needed
  • To serve cut into dice
