BEET BURGER

Prep/Cooking Time: Longer Than 120 Minutes

Ingredients

  • 230g roasted eggplant
  • 150g button mushroom
  • 150g cooked quinoa
  • 200g cooked beetroot
  • 4g garlic powder
  • 4g onion powder
  • 350g oats
  • salt
  • pepper

Instructions

  • Remove the skin from the cooked eggplant
  • Mash the cooked eggplant with a fork in a mixing bowl
  • Add to the bowl the grated raw mushrooms
  • Add to the bowl the cooked quinoa
  • Remove the water from the cooked beetroot packet then grate the beetroot directly into the bowl
  • Add to the bowl the garlic and onion powder
  • Add 120g of the raw oats
  • Cook the remaining oats with water till a thick consistency is acheived
  • Add 300g of cooked oats to the bowl
  • Season to taste with salt and pepper
  • If the texture is still too wet add more raw oats
  • Leave overnight to rest and flavours to develop
  • Form into patties
  • Reserve in the fridge till needed
