BEET BURGER

Ingredients
- 230g roasted eggplant
- 150g button mushroom
- 150g cooked quinoa
- 200g cooked beetroot
- 4g garlic powder
- 4g onion powder
- 350g oats
- salt
- pepper
Instructions
- Remove the skin from the cooked eggplant
- Mash the cooked eggplant with a fork in a mixing bowl
- Add to the bowl the grated raw mushrooms
- Add to the bowl the cooked quinoa
- Remove the water from the cooked beetroot packet then grate the beetroot directly into the bowl
- Add to the bowl the garlic and onion powder
- Add 120g of the raw oats
- Cook the remaining oats with water till a thick consistency is acheived
- Add 300g of cooked oats to the bowl
- Season to taste with salt and pepper
- If the texture is still too wet add more raw oats
- Leave overnight to rest and flavours to develop
- Form into patties
- Reserve in the fridge till needed
