Ingredients

  • 300g Beef trimmings
  • 1 Head garlic
  • 300g Onion
  • 200g Carrot
  • 6g Rosemary
  • 2g Thyme
  • 200g Tomato paste
  • 1ltr Red wine
  • 6ltr Water

Instructions

  • Put a thick bottom pan on the stove over a high gas
  • Add to the pan a little oil and the diced beef trimmings
  • Cook the beef till evenly browned
  • Add to the pan the roughly chopped Garlic, onion and carrot
  • Cook until the vegetables are also golden
  • Add the herbs to the pan
  • Add the tomato paste to the pan and cook through for a couple minutes
  • Add to the pan the red wine and stir in well
  • Leave to simmer for a couple minutes then add the water
  • Bring to the boil and turn down to a simmer
  • Cook for 2 hours
  • Skim regularly to remove the fat
  • Remove from the stove and strain the liquid
  • Leave to cool and refrigerate till needed
