BEEF LIQUOR
Prep/Cooking Time:
Longer Than 120 Minutes
Ingredients
- 300g Beef trimmings
- 1 Head garlic
- 300g Onion
- 200g Carrot
- 6g Rosemary
- 2g Thyme
- 200g Tomato paste
- 1ltr Red wine
- 6ltr Water
Instructions
- Put a thick bottom pan on the stove over a high gas
- Add to the pan a little oil and the diced beef trimmings
- Cook the beef till evenly browned
- Add to the pan the roughly chopped Garlic, onion and carrot
- Cook until the vegetables are also golden
- Add the herbs to the pan
- Add the tomato paste to the pan and cook through for a couple minutes
- Add to the pan the red wine and stir in well
- Leave to simmer for a couple minutes then add the water
- Bring to the boil and turn down to a simmer
- Cook for 2 hours
- Skim regularly to remove the fat
- Remove from the stove and strain the liquid
- Leave to cool and refrigerate till needed
