BBQ BEANS

Ingredients

  • 120g red onion
  • 60g garlic
  • 20g sweet chili
  • 120g red bell peppers
  • 80g olive oil
  • 20g smoked paprika
  • 5g chili powder
  • 100g sugar
  • 200g white wine vinegar
  • 1 kilo canned chopped tomatoes
  • 200g tomato paste
  • 40g salt
  • 2g pepper
  • 2 kilo white beans

Instructions

  • Wash and peel the onions, chili, garlic and peppers
  • Roughly chop and place in a thick bottomed pan
  • Add to the pan the olive oil and heat over high
  • Cook till the onions and peppers begin to colour
  • Add to the pan the paprika and chili powder and cook for 2 minutes
  • Add to the pan the tomato paste and cook out for 2 minutes
  • Add to the pan the sugar and vinegar
  • Simmer for 5 minutes
  • Add to the pan the chopped tomatoes and bring to the simmer
  • Cook for 40 minutes
  • Once cooked add the drained and rinsed beans to the pan
  • Bring to the simmer and season to taste
  • Remove from the heat and leave to cool
  • Reserve in the fridge till needed
