BBQ BEANS
Prep/Cooking Time:
90-120 Minutes
Ingredients
- 120g red onion
- 60g garlic
- 20g sweet chili
- 120g red bell peppers
- 80g olive oil
- 20g smoked paprika
- 5g chili powder
- 100g sugar
- 200g white wine vinegar
- 1 kilo canned chopped tomatoes
- 200g tomato paste
- 40g salt
- 2g pepper
- 2 kilo white beans
Instructions
- Wash and peel the onions, chili, garlic and peppers
- Roughly chop and place in a thick bottomed pan
- Add to the pan the olive oil and heat over high
- Cook till the onions and peppers begin to colour
- Add to the pan the paprika and chili powder and cook for 2 minutes
- Add to the pan the tomato paste and cook out for 2 minutes
- Add to the pan the sugar and vinegar
- Simmer for 5 minutes
- Add to the pan the chopped tomatoes and bring to the simmer
- Cook for 40 minutes
- Once cooked add the drained and rinsed beans to the pan
- Bring to the simmer and season to taste
- Remove from the heat and leave to cool
- Reserve in the fridge till needed
