BANOFFEE PIE

Prep/Cooking Time: Longer Than 120 Minutes

Ingredients

  • 100g sweet pastry dough
  • 1 can condesed milk
  • 120g banana
  • 60g cream
  • 12g sugar
  • 2g cocoa powder
  • 2g mint (plush)

Instructions

  • Place the can of condensed milk in a small saucepan and cover with water
  • Bring to the boil then turn to simmer 
  • Cook for 3 hours, topping up the water if necessary
  • After 3 hours remove from the water and leave to cool
  • Remove the dough from the fridge and roll out till 5mm thick
  • Place in the tart shell and press to fit 
  • Cook the tart shell in a pre-heated oven at 180c
  • Cook till golden
  • Once cooked remove from the heat and leave to cool at room temperature
  • Place the cream and sugar in a whisking bowl and whisk till firm
  • To serve place the tart shell on the plate 
  • Spoon into the shell the toffee sauce
  • Top with the sliced banana and another spoon of toffee
  • Spoon on the whipped cream and sprinkle with the cocoa powder
