BANOFFEE PIE

Ingredients
- 100g sweet pastry dough
- 1 can condesed milk
- 120g banana
- 60g cream
- 12g sugar
- 2g cocoa powder
- 2g mint (plush)
Instructions
- Place the can of condensed milk in a small saucepan and cover with water
- Bring to the boil then turn to simmer
- Cook for 3 hours, topping up the water if necessary
- After 3 hours remove from the water and leave to cool
- Remove the dough from the fridge and roll out till 5mm thick
- Place in the tart shell and press to fit
- Cook the tart shell in a pre-heated oven at 180c
- Cook till golden
- Once cooked remove from the heat and leave to cool at room temperature
- Place the cream and sugar in a whisking bowl and whisk till firm
- To serve place the tart shell on the plate
- Spoon into the shell the toffee sauce
- Top with the sliced banana and another spoon of toffee
- Spoon on the whipped cream and sprinkle with the cocoa powder
