BAKED SALMON W QUINOA

Prep/Cooking Time: 30-45 Minutes

Ingredients

  • 1 Filet of salmon
  • 15ml Olive oil
  • Salt
  • Pepper
  • 800g Cooked quinoa
  • 200g Cucumber
  • 200g Cherry tomatoes
  • 1/4 Lemon per portion

Instructions

  • Place the salmon filet skin side down on a baking sheet
  • Rub the flesh with the olive oil
  • Season with the salt and pepper
  • Place the salmon in the oven at 180c and cook for 12-15 minutes or until pink
  • Once cooked remove from the oven and leave to cool
  • In a mixing bowl place the cooked quinoa
  • Wash the cherry tomatoes and the cucumber
  • Cut the cherry tomatoes in half and add to the quinoa
  • Remove the ends from the cucumber and discard
  • Cut the cucumber into 1/2cm size dice and add to the quinoa
  • Add a little olive oil and mix together well
  • Reserve in the fridge till needed

Packaging

  • Spoon 200g of the quinoa salad into a 24oz container
  • Place 65-75g of the baked salmon on top
  • Add a lemon wedge and cover with a lid to seal
