BAKED SALMON W QUINOA
Prep/Cooking Time:
30-45 Minutes
Ingredients
- 1 Filet of salmon
- 15ml Olive oil
- Salt
- Pepper
- 800g Cooked quinoa
- 200g Cucumber
- 200g Cherry tomatoes
- 1/4 Lemon per portion
Instructions
- Place the salmon filet skin side down on a baking sheet
- Rub the flesh with the olive oil
- Season with the salt and pepper
- Place the salmon in the oven at 180c and cook for 12-15 minutes or until pink
- Once cooked remove from the oven and leave to cool
- In a mixing bowl place the cooked quinoa
- Wash the cherry tomatoes and the cucumber
- Cut the cherry tomatoes in half and add to the quinoa
- Remove the ends from the cucumber and discard
- Cut the cucumber into 1/2cm size dice and add to the quinoa
- Add a little olive oil and mix together well
- Reserve in the fridge till needed
Packaging
- Spoon 200g of the quinoa salad into a 24oz container
- Place 65-75g of the baked salmon on top
- Add a lemon wedge and cover with a lid to seal
