BAGELS
Prep/Cooking Time: 60-90 Minutes

- 1150g flour
- 660g water
- 22g salt
- 28g brown sugar
- 22g yeast
- 28g brown sugar
- 12g bicarbonate soda
- 1 egg
Instructions
- Place all the dry ingredients into a small machine bowl
- Add the slightly warm water to the bowl
- Mix on medium speed till a smooth dough is achieved
- Remove from the machine and cover with a damp cloth
- Once the dough has doubled in size turn out onto a dry surface
- Cut the dough into 120g pieces
- Roll the pieces till a smooth ball is achieved
- Cover with a damp cloth or plastic sheet and leave for 20 minutes
- Place a pan of water over a high heat and bring to the boil
- Turn on the oven and set to 440f
- Piece by piece roll the dough to form the bagels and place them on an oiled surface
- When the water boils add to the pan the brown sugar and bicarbonate soda
- Place bagels in the solution and boil for 30 seconds on each side
- Remove from the solution and place on a baking sheet
- Glaze with the beaten egg and add the required toppings
- Cook for 20 minutes in a 440f pre heated oven
